Our Roasting Facility

Where Flavor Blooms

When we step into Mattot’s coffee roasting process, it all begins with a belief—a belief in delivering the highest quality roasted, ground, and packed coffee. Our commitment to excellence is powered by state-of-the-art machinery and the artistry of our roast masters.

1. Artisan Roasting

  • We embrace the art of roasting. It’s not just science; it’s an exploration. Our roasters have extensive experience and exposure to different roasting techniques. This diversity gives us an edge, allowing us to experiment and enhance the unique flavors and notes found in amazing Ethiopian coffee.
  • We follow the concept of roasting at origin, making the journey from bean to cup more meaningful. Each roast is a celebration of the coffee’s birthplace, its terroir, and the hands that nurtured it.
  • 2. The Roast Profile

  • Our roasters are meticulous. They carefully select the right roast profile for each coffee. It’s like tailoring a suit—finding the perfect fit to bring out the best in every bean.
  • They pay attention to:
    • Roast Levels - Whether it’s a light, medium, or dark roast, they know how to coax out the desired flavors.
    • Impact on Flavor - Roasting isn’t just about heat; it’s about flavor alchemy. Our roasters orchestrate the transformation, turning green beans into aromatic delights.
    • Bean Quality - Only the finest beans make the cut. Quality matters.

So, when you sip your cup of Mattot coffee, know that it’s more than a beverage it’s a symphony of craftsmanship, passion, and flavor.

  • Our Brewing Alternatives

    • French Press: This method involves steeping coffee grounds in hot water before pressing them out. This results in a full-bodied, rich cup of coffee.
    • Pour Over/Drip: In this method, hot water is poured over coffee grounds in a filter, and the coffee drips into a carafe or cup. This method produces a clean, clear cup of coffee and highlights the coffee's acidity.
    • Espresso Machine: This method forces hot water under high pressure through finely ground coffee. This results in a concentrated, richly flavored coffee.
    • Aeropress: This is a manual coffee maker that uses pressure to brew coffee. It creates a strong, smooth and less acidic coffee.
    • Cold Brew: This involves steeping coffee grounds in cold water for an extended period. This method results in a sweet, smooth, and less acidic coffee, perfect for those hot summer days.
    • Moka Pot: Also known as stovetop espresso maker, this brewing method uses steam pressure to force hot water through coffee grounds, producing a strong and rich coffee.
